Quick Refrigerator Pickles


This is one of our favorite summer salads. You basically slice up a couple cucumbers, a tomato, an onion, throw in some salt and pepper and vinegar, oil and water. You want enough vinegar that they taste slightly pickle-y before they ever reach the fridge. Then, let them sit in that until you're ready to eat them, at least 30 minutes. These aren't a pickle that will keep for more than a week or so, but in our house they don't last through two meals, and that is if I make a big batch!
