Maple Oatmeal Muffins

Maple Oatmeal Muffins
(adapted from Midwest Living Recipe)

Preheat oven to 400℉ and grease a 12-muffin pan.

1 c old fashioned oats
½ c milk
Soak the oats in the milk for at least 5 minutes.

1 c unbleached, all-purpose flour
2 t baking powder
¼ t salt
¼ t ground cinnamon
Mix together in a separate bowl.

¾ c pure maple syrup (settle for nothing less!)
¼ c butter, melted
1 egg, lightly beaten
Mix together with your oat mixture. Add to the flour mixture all at once and mix only until combined. Add ½ c chopped pecans and spoon evenly into your baking cups. Sprinkle the top of each muffin with dark brown sugar  and then bake for 15-18 minutes, until each muffin is golden and a toothpick comes out clean after inserted.
These will have a slightly less crumby consistency as compared to regular muffins, but they are fabulous!
